Öskuhús is based in Blandford and makes Icelandic inspired food & drinks, all using the ash tree. Constantly looking at new ways to introduce Ash into our diet.
For years, the knowledge about the ash tree holding incredible health benefits for both humans and animals has been long lost. This tree is dying out from Ash Dieback and soon it will be too late for us make a difference. Trees give us oxygen, shelter, enrichment of the soil, increased property prices in leafier areas and most of all they bear fruit. Within their bark, roots, leaves and branches lies the key to the drugs we buy in pharmacies. Yet for some reason we dismiss this.
Öskuhús uses elements of the Ash tree and no trees are damaged. Think of it as pruning and utilising what would become waste otherwise. We infuse it, mix and or steep it, to give a lush tasting product.
The menu for the evening is as follows:
Welcome drink: Ash iced tea with Canapes
Main: Ashquavit and tonic with smoked ash meat and Ash smoked veg for the veggies
To finish: Portash with a butter cracker and cheese – topped with pickled rhubarb
